Crunchy Asian Broccoli Coleslaw


~I am into trying new recipes right now. After going through my first trimester of pregnancy and the wonderful smells that get to you a lot of my favorite dishes are still not edible. Also with this heat only cold dishes sound good to me. I tried this one out yesterday & I have to say again well done Kraft Foods. I love this website! They have very many yummy things that are fast, easy, and very cheap! Enjoy!

9 servings, 1 cup each

1/2 cup KRAFT Zesty Italian Dressing
2 pkg. (3 oz. each) ramen noodle soup mix
2 pkg. (12 oz. each) broccoli slaw
4 green onions, sliced
1/2 cup PLANTERS Dry Roasted Sunflower Kernels
1/2 cup PLANTERS Sliced Almonds, toasted

MIX dressing with Seasoning Packet from one of the soup mix packages. Discard remaining seasoning packet or reserve for another use.

BREAK apart Noodles; place in large bowl. Add slaw, onions, sunflower kernels and almonds; mix lightly.

ADD dressing mixture; toss to coat. Serve immediately.

Make Ahead
Dressing mixture can be prepared ahead of time. Cover and refrigerate up to 24 hours. Noodles can also be crumbled the day before; place in resealable plastic bag along with the sunflower kernels and almonds. Seal bag and store at room temperature until ready to use to assemble salad.

German Pancakes

6 Eggs
1 C. Milk
½ tsp. Salt
1 C. Flour
5 Tbsp. Butter

Whip eggs & milk. Add salt, butter, and flour.
Bake @ 450 15-20 Min.

Mountain Man Casserole

26 oz pkg. shredded hash browns
9 eggs
1 tsp seasoned salt
1 C meat:
Bacon, ham, or sausage
2/3 C melted butter
1 C milk
2 C grated cheese

Butter cake pan & line with most of the hash browns. Drizzle melted butter over top & sprinkle with seasoned salt. Bake @ 400 for 15-20 min. Mix together eggs, milk, & salt, set aside. Sprinkle hash browns with cheese. Put meat on top & cut the eggs into the hash browns. Top with remaining has browns & bake @ 350 for 45 min.

Crepes

1 C flour
2 Eggs
½ C milk
½ C water
¼ tsp salt
2 T melted butter

Place ingredients in a blender & blend for 30 sec. Stop & scrape down sides. Blend 30-60 sec until smooth. Pour 2 T batter into hot pan. (med-high heat) rotate pan to spread very thin. Cook until lightly brown.

Spaghetti Bake

1 ½ lb. diet lean ground beef
1 onion
1 clove fresh garlic, minced
1 lg. can cut up tomatoes (25 oz.)
1 can tomato sauce (15 oz.)
1 can/bottled sliced mushrooms (4 oz.)
1 tsp. sugar
¾ tsp. seasoning salt
1-2 tsp. oregano
8 oz. spaghetti, broken & cooked
2 C. grated mozzarella cheese
About ¼ C Parmesan cheese

Brown meat. Drain off any fat. Sauté garlic & onion with meat. Add tomatoes, tomato sauce, mushrooms, sugar, seasoning salt, & oregano. Simmer about 15 min.

Meanwhile, break spaghetti into a large pan of salted, boiling water & cook until tender. Drain. Combine with the meat mixture . Place half in a 9x13 baking dish. Layer mozzarella on top. Then repeat the rest of the meat mixture. Sprinkle Parmesan cheese on top. Bake, covered with foil @ 350 for 30-45 min or until hot & bubbly. (can make ahead of time & refrigerate. This usually takes longer to heat up in oven.)

Chicken Parmesan

6 chicken boneless skinless breasts
½ C bread crumbs
½ C Parmesan cheese
1 egg beaten
¼-1/3 C olive oil

Combine bread crumbs & Parmesan cheese. Dip chicken in egg then crumbs. Brown in oil
1 jar spaghetti sauce
1 clove garlic
1 tsp oregano

Combine spaghetti sauce, garlic, oregano. Pour into bottom of baking dish. Place chicken on sauce. Bake covered @ 350 for 40 min.
Top each piece of chicken with slice of mozzarella cheese.

Bake uncovered 5-10 min more.

Serve over cooked spaghetti pasta. Sprinkle with 2 T parsley.

Pasta with Asparagus

½ Lb Pasta cooked and drained
4 Garlic cloves, Minced
¼ C Olive Oil
1 Lb fresh asparagus, cut into 1 ½ '' pieces
1 tsp salt
¼ c shredded Parmesan cheese

Cook pasta, meanwhile in a skillet cook minced garlic in butter oil for 2-3 min. Add asparagus & salt. sauté until asparagus is crisp-tender, about 8-10 min. Put pasta on a large bowl. Pour asparagus over hot pasta. Top with shredded cheese and serve.

Pizza Rolls

Mix Together & microwave 1 Min:
1 C Scalded Milk
2 T Margarine Melted
2 T Sugar
¾ tsp Salt
3-3 ½ C Flour
1 T Yeast
Add Sugar to milk and Margarine. Dissolve yeast in ½ C warm water. 1 C flour- Mix till smooth. Add yeast - flour (knead)
Roll out like pie, cover with spaghetti sauce or pizza sauce. (light) Put on toppings. Roll like Cinnamon rolls & slice, then put into 9x13 pan.
Bake 350- 20 -30 min
Last 10 min put sauce & cheese on top.

Olive Garden Fettuccine

1 pt cream
1 cube butter
2 T cream cheese
½-¾ C Parmesan cheese
1 tsp garlic powder
Fettuccine

Cook pasta. Meanwhile combine other ingredients cook until thick & smooth.

Lasagna

½ Lb lasagna noodles (9 noodles)

1 ½ pounds ground beef

3 cloves garlic, minced

¼ tsp pepper

1 (1 pound, 12 oz) crushed tomatoes

1 (8 oz) can tomato sauce

1 (3 oz) package spaghetti sauce mix

1 T sugar

2 C ricotta or cottage cheese

2 C mozzarella cheese, grated

Cook lasagna noodles as directed on package. Pour off water. Place each noodle carefully on waxed paper to prevent sticking together. Brown ground beef. Add minced garlic & pepper to ground beef. Cook & stir for about 2 min. Stir in crushed tomatoes, tomato sauce, & spaghetti sauce. Simmer about 15 min Remove from heat. Set aside 1 cup meat sauce & ½ cup grated cheese for later.

Grease 9x13 pan. Layer 1 cup meat sauce mixture on bottom of pan. Layer 3 noodles over meat sauce mixture to cover. Layer ½ cup cottage cheese, followed by ½ cup grated mozzarella cheese, over that. Repeat layers a total of 3 times, ending with the reserved 1 cup meat sauce & ½ cup reserved grated mozzarella cheese.

Bake @ 350 for 30 min. Remove from oven and let stand for 10 min before serving. Makes 10-12 servings.

Artichoke Dip

1 (16oz) can (not marinated) artichokes
1 small can diced green chilies
1 C non fat mayonnaise
1 C freshly grated Parmesan cheese (not from a can)
1 C spinach optional
Drain & cut up artichokes. Stir all ingredients together. Bake @ 325 for 25-30 min, or microwave until hot. Serve with Fritos chips or bread.

Maya's Mayan-Spiced Chicken Burgers

2 pounds ground chicken
1 tablespoon (a palmful) ground cumin
1 tablespoon (a palmful) chili powder
2 tablespoons (a mounded palmful) grill seasoning, such as Montreal Steak Seasoning
1/2 teaspoon ground cinnamon
1/4 cup parsley, finely chopped (eyeball it)
2 tablespoons cilantro, finely chopped
EVOO (extra-virgin olive oil), for drizzling
2 ripe Hass avocados
1 clove garlic, minced then mashed into paste with 1 teaspoon salt
Juice of 1 lemon
1/2 small white or red onion, finely chopped
1 large jalapeño pepper, seeded and finely chopped
3 plum tomatoes, 1 seeded and finely chopped, 2 thinly sliced
Bibb or butter lettuce leaves
4 rolls split, reserve or lightly toast then reserve
A bag of blue and yellow corn tortilla chips

Five Vegetable Slaw Salad:
1 pound sack shredded cabbage
1 large red bell pepper, seeded and cut into thin slices
4 scallions, sliced thinly on an angle (greens and whites)
Juice of 2 limes
1/4 cup (3 healthy drizzles) honey
3 tablespoons vegetable or light-colored oil
Salt and pepper

* Place ground chicken in bowl and add cumin, chili powder, grill seasoning, ground cinnamon, parsley and cilantro.
* Add a drizzle of EVOO and mix to combine.
* Score the meat in 4 equal parts then form 4 patties about 1 1/2-inches thick.
* Heat a large, nonstick skillet over medium-high heat with EVOO and add the burgers. Cook about 5 minutes on each side, until cooked all the way through -- there shouldn't be any pink in the middle.
* Once the burgers are cooked, transfer them to a plate and cover with foil to keep warm while you make the guacamole.
* In a medium-size bowl, mash the avocado. Add the garlic paste, lemon juice, onion, jalapeño and finely chopped tomato.
* For the slaw, combine vegetables in a serving bowl. In another small bowl, combine lime juice and honey. While whisking, drizzle in EVOO in a slow and steady stream. Pour dressing over slaw and season with salt and pepper to taste.
* Transfer burgers to the toasted bun bottoms and top with sliced tomatoes, lettuce and a rounded tablespoonful of guacamole. Serve Mayan burgers with Five Vegetable Slaw Salad and tortilla chips alongside. YUM-O!

Caramelized Beef Skewers

1 lb sirloin steak, thinly sliced

¼ C A1 original steak sauce, divided

¼ C KRAFT original BBQ sauce

1 tsp. Grey Poupon dijion mustard

Toss steak with 2 T of the steak sauce; let stand 10 min to marinate. Meanwhile, combine remaining 2 Tbsp steak sauce, the BBQ sauce & mustard; set aside.

Preheat grill to medium high heat. Thread steak onto 8 long soaked wooden or metal skewers.

Grill skewers 6 mins or until steak in cooked through turning every 3 min & brushing generously with BBQ sauce mixture

Home Made Root Beer

5 Gallons cold water

5 pounds white sugar

1 (2 oz) bottle root beer concentrate (you can buy it in the spice section of most stores)

5 Pounds dry ice

Place 4 gallons of the cold water in a large container. Add sugar & stir until dissolved. Pour in root beer extract & mix. Add the dry ice & put the lid on loosely so the gas can escape. Let brew for about 15 min. Add the last gallon of water and let brew for another 15 min. Serves 60

Cheese Fondue

Combine:
¼ C chicken broth
3 T cornstarch
Dash of pepper
¼ tsp salt
¼ tsp Worcestershire sauce

Combine these ingredients, stirring until melted:

1 ¾ C chicken broth
1-2 garlic cloves
2 C Swiss cheese, cubed not grated
2 C Monterey jack cheese, cubed not grated

Combine first se of ingredients into cheese mixture after it is melted. Keep stirring & pour into heated fondue pot immediately and serve.
Serve with cut up pieces of French bread, sourdough bread, or crackers. Make sure each piece of bread has crust on it if possible. Lightly toast breast in oven until outside is lightly baked.

Cook on stove at 225 when checked with a candy thermometer. Pour over large bowl of popcorn.

1 C sugar
1 C corn syrup
1 C peanut butter
1 C salted peanuts

3 C rice Krispies

Bring to a boil sugar & syrup. Remove from heat & add peanut butter, rice krispies, & peanuts. Butter 9x13 '' pan, pour mixture in, & let cool. Melt both chips, spread over mixture. Cut into squares

1 Pkg. 8oz cream cheese
1/3 C Sugar
1 Egg
½ tsp Vanilla

Mix Brownies as directed. Pour into Greased 13x9'' pan.
Beat cream cheese until smooth. Add sugar mix until blended. Add egg & vanilla; mix just until blended
Pour cream cheese mixture over brownie mixture; cut through batter with knife several times for marble effect. Bake 350 35-40 min or until cream cheese is lightly brown. (no syrup pouch brownies)

Mixture is thin. Pour on crust & bake 20 Min @ 350 When Finished baking, sprinkle with powdered sugar.

2 C Quick Oats
1 C Sugar
1 Egg
2 tsp Baking Soda
2 tsp Cinnamon
1 T Vanilla
1 tsp Salt

2 C Brown Sugar
1 ½ C Margarine

Combine flour, oats, soda, cinnamon, & salt. Set aside. Cream butter; gradually add sugar, beat until light and fluffy. Add egg & vanilla. Add Choc Chips then bake @ 350 20-25 min.

Raspberry Homemade Ice Cream

1 Can evaporated milk
1 pt cream
2 bags frozen raspberries
2 ½ - 3 C sugar
1 tsp vanilla
3-4 mashed bananas

Mix bananas & raspberries together. Mix all remaining ingredients together. Place in freezer & fill up with milk to fill line. Freeze

3 ripe bananas, mashed

Beat eggs, add sugar & rest of the ingredients. Mix & freeze, then add 2-3 cups broken vanilla wafers (which have been broken ahead of time & placed in a bowl in the freezer). Stir cookies in so they are well mixed. Pack & freeze hard if desired.

Orange Julius

½ of 6 oz can frozen orange juice concentrate
½ C milk
½ C water
¼ C sugar
½ tsp vanilla
10-12 ice cubes

Combine all ingredients in blender, cover and blend until smooth. Serve immediately.

Fruit Slush

5 mashed bananas
1 large can pineapple juice
1 12 oz can lemonade concentrate
1 12 oz can orange juice concentrate
2-3 C sugar
5 C water

Mix together & freeze. Let soften slightly & spoon into punch bowl or individual glasses. Pour lemon lime soda over slush.

Side Dishes

Roasted Red Potatoes

with Bacon & Cheese

Makes:

1/2 cup KRAFT Ranch Dressing

1/2 cup KRAFT Finely Shredded Italian* Five Cheese Blend

1/4 cup OSCAR MAYER Real Bacon Bits

2 lb. small red bliss potatoes, quartered (about 6 cups)

1 Tbsp. chopped fresh parsley

PREHEAT oven to 350°F. Mix dressing, cheese and bacon bits in large bowl. Add potatoes; toss lightly.

SPOON into lightly greased 13x9-inch baking dish; cover with foil.

BAKE 40 min. Remove foil; bake an additional 15 min. or until potatoes are tender. Sprinkle with parsley.

Funeral Potatoes

12 large potatoes or 1 (32 oz) bag frozen shredded hash browns

2 (10 ¾ oz) can cream of chicken soup

2 C sour cream

1 C grated cheddar cheese

½ C butter, melted

1/3 C chopped onion

2 C crushed corn flakes

2 T butter, melted

Peel potatoes and boil for 30 min, until just tender. Cool & grate into a greased 9x13 baking dish. (or put hash browns into baking dish). Combine soup concentrate, sour cream,cheese, the ½ C melted butter, & onions. Gently belnd into potatoes. Combine crushed corn flakes & the 2 T of melted butter. Sprinkle on top. Bake @ 350 for 30 min. Makes 12 servings.

Swiss Cheese & Green Beans

½ C margarine
4 T Flour
1 C milk
Melt margarine, add flour & milk to make sauce.
Add to sauce & cook until bubbly:
1 tsp. salt
1 tsp. pepper
1 T minced onion
1 C sour cream
Layer 4 cans green beans, grated or sliced Swiss cheese, and sauce. Make 3 layers. Top with French fried onion rings. Bake @ 400 for 20 min.

Poppy Seed Pound Cake Muffins

2 C flour
3 tsp. poppy seeds
½ tsp salt
¼ tsp baking soda
1 tsp. vanilla
1 C sugar
2 eggs
½ C butter
1 C plain yogurt

Cream butter and sugar. Beat in eggs, 1 at a time.

Beat in yogurt & vanilla. Add dry ingredients until

thoroughly moistened. Grease muffin tins. Bake @ 400 for 15-20 min.

Parker House Rolls

Measure into mixing bowl: ½ C warm water. Add, stirring to dissolve: 2 pkg. active dry yeast.
Stir in:
1 ½ C lukewarm milk
½ C sugar
2 tsp salt
2 eggs
½ C soft shortening
½ of 7-7 ½ sifted gold medal flour
Mix with a spoon until smooth. Add enough remaining flour to handle easily; mix with hand. Turn into lightly floured board; knead until smooth and elastic (about 5 min). Put into grease bowl, grease the top of the dough, & cover with damp cloth. Let rise in a warm place until double in size. (about 1 ½ hrs). punch down; let rise again until almost double (about 30 min.) roll dough ¼ inch thick. Cut with a cup. Brush with melted butter. Fold over & shape as desired. Press edges together at crease. Place close together on greased pan. Let rise again 20 min. preheat oven to 400. Bake for 12-15 min or until golden brown. Remove form baking sheet immediately.

Grandma Hansen's Hard Rolls.

1 pkg. dry yeast
1 ½ T sugar
¼ C vegetable oil
6 C flour
¼ C lukewarm water
2 ½ tsp salt
1 ¾ C warm water
Dissolve yeast in ¼ C lukewarm water. Stir in remaining ingredients together & let rise for 60 min; shape into rolls. Brush with egg & sprinkle with sesame seeds or poppy seeds. Let rise for 30 in. Bake @ 425 for 15-20 min.

Salads


Toasted Walnut and Pear Salad

Salad

1 pound mixed baby greens (washed)

24 Belgium endive leaf spears (I usually do it without this as it is hard to find them sometimes)

12 asparagus spears (blanched)

3/4 c. walnuts (toasted)

2 Bartlett pears (peeled and coarsely chopped)

Walnut vinaigrette (see below)

Lay six large salad plates out on counter. Arrange 3 endive leaves close together around outside edge of plate. Divide mixed greens among the plates being careful not to cover up endive. Criss-cross asparagus spears on top of greens. Sprinkle with toasted walnuts and pears. Drizzle with vinaigrette. (you can also just toss it all in a bowl and have each person do their own dressing on top).

Walnut Vinaigrette

3/4 c. raspberry vinegar

1 tsp. salt

1 tsp. coarse-ground pepper

1/2 c. walnuts (toasted)

1 c. extra-virgin olive oil

Combine vinegar, salt, pepper and nuts in a food processor. Pulse until blended. With processor running slowly add olive oil and blend until homogenized. Refrigerate up to four weeks.

Café Rio Salad Dressing

1 Anaheim Pepper

2 Medium Tomatillos (cut into bite size pieces.)

½ bunch of Cilantro

Juice form 1 Lime

¾ Jar KRAFT peppercorn ranch

Salt to taste

3 cloves Garlic

Pour ranch into blender, add tomatillos, Anaheim pepper, cilantro, & garlic. Blend 1 min until smooth. Pour lime juice, blend again. Add salt. Blend. Refrigerate. *Makes about 1 bottle of dressing

5 Strips bacon crumbled

3 T Lemon Juice

Mix thoroughly & let sit while you prepare bacon & rest of salad, so sugar can dissolve.
