Salads


Toasted Walnut and Pear Salad

Salad

1 pound mixed baby greens (washed)

24 Belgium endive leaf spears (I usually do it without this as it is hard to find them sometimes)

12 asparagus spears (blanched)

3/4 c. walnuts (toasted)

2 Bartlett pears (peeled and coarsely chopped)

Walnut vinaigrette (see below)

Lay six large salad plates out on counter. Arrange 3 endive leaves close together around outside edge of plate. Divide mixed greens among the plates being careful not to cover up endive. Criss-cross asparagus spears on top of greens. Sprinkle with toasted walnuts and pears. Drizzle with vinaigrette. (you can also just toss it all in a bowl and have each person do their own dressing on top).

Walnut Vinaigrette

3/4 c. raspberry vinegar

1 tsp. salt

1 tsp. coarse-ground pepper

1/2 c. walnuts (toasted)

1 c. extra-virgin olive oil

Combine vinegar, salt, pepper and nuts in a food processor. Pulse until blended. With processor running slowly add olive oil and blend until homogenized. Refrigerate up to four weeks.

Café Rio Salad Dressing

1 Anaheim Pepper

2 Medium Tomatillos (cut into bite size pieces.)

½ bunch of Cilantro

Juice form 1 Lime

¾ Jar KRAFT peppercorn ranch

Salt to taste

3 cloves Garlic

Pour ranch into blender, add tomatillos, Anaheim pepper, cilantro, & garlic. Blend 1 min until smooth. Pour lime juice, blend again. Add salt. Blend. Refrigerate. *Makes about 1 bottle of dressing

Pasta Salad

4-5 Chicken Breast
½ C Green onion Chopped
1 C Cashews
¾ C Chopped Celery
1 Pkg Colored Swirled Pasta
2 Can Pineapple Tidbits

Dressing:
½ C Coleslaw Dressing
1 C Mayo
2 T Mustard
¼ C Sugar
1 T Milk

Broccoli Salad

Wash & dry fresh broccoli. Using fresh tips only. 1 Lrg bunch.
5 Strips bacon crumbled
¼ purple onion chopped fine
¼ c raisin

Dressing:
1 C Mayo
3 T Lemon Juice
1/3 C Sugar
Mix thoroughly & let sit while you prepare bacon & rest of salad, so sugar can dissolve.

Poppy Seed Salad

2 Heads red Leaf Lettuce
2 Avocados
2 Cans Mandarin Oranges- Drained
Small Package Slivered Almonds
1 Pkg Bacon Crumbled

Dressing:
1 C Mayo
¼ C Sugar
2 T Red Wine Vinegar
2 T Poppy Seeds

Chinese Chicken Salad

Shredded Chicken
Lettuce
Fried Won Tons
4 Green onions Chopped
2 T almonds
2 T Sesame Seeds
Dressing:
2T Sugar
1 tsp Salt
½ tsp Pepper
¼ C Oil
3 T red Wine Vinegar
